Instructions:

1. Preparation of Chicken Wings

  • Separate and Dry: Separate wings into flats and drumettes, then pat them dry with a paper towel to remove any excess moisture. This will ensure that they are crispy when fried.
  • Season wings with salt, pepper and optionally garlic powder, onion, smoked paprika or cayenne pepper. Toss wings to evenly coat.

2. Coat the wings:

  • A mixture of Flour: In a shallow bowl, combine flour, garlic, onion, smoked paprika and cayenne pepper. Dredge each wing into the mixture and shake off any excess flour.

3. Fry the Wings

  • Heat Oil. In a large saucepan or deep fryer, heat vegetable oil until it reaches 350degF (or 175degC). If you don’t have a thermometer, try frying a piece of bread.
  • Fry in batches, 8-10 minutes at a time, until golden and crispy. Flip the wings halfway through to ensure even cooking. Drain the excess oil onto a plate lined with paper towels.

4. Prepare the Mango Habanero Sauce

  • Blend Sauce: In the blender, combine Mango, habanero, honey, orange juice and soy sauce. Also, add garlic powder, onion, and smoked peppers. Blend until smooth. Season with salt and pepper.
  • Cook the Sauce. Pour the sauce into a small pan and cook over medium heat, stirring frequently, for 5 to 7 minutes until it becomes slightly thicker.

5. Toss wings in sauce:

  • Coat the wings: Pour the sauce of mango habanero over the fried chicken wings. Toss the wings to evenly coat them.

6. Serve and enjoy:

  • Garnish Optional garnish: chopped cilantro or lime juice.
  • Serve: You can serve your wings as-is or with ranch dressing or blue cheese for a cool down.

Tips for Perfect Mango Habanero Wings:

  • Reduce heat by removing habanero seeds or using fewer peppers. Add more peppers for extra spice.
  • Fresh Mango is best. However, frozen Mango or puree can also be substituted.
  • Double-fry your wings for extra crispiness: To get super crispy wings, first fry for 5 minutes and then let them rest for 3-4 minutes.
