Instructions:

1. Preparation of Chicken Wings

  • Separate and dry: If you are using whole wings, cut through the joints to separate them into flats and drumettes. To ensure that the wings crisp up when fried, pat them dry with a piece of paper towel.
  • Season the wings with salt, pepper and optionally smoked paprika. Toss evenly to coat.

2. Coat the wings:

  • Make the Flour Blend: In a shallow bowl, combine the flour with the garlic powder, onion, smoked paprika and cayenne. Add salt and pepper.
  • Dredge the wings: Coat the wings with the flour mixture and shake off any excess. Your wings will have a crunchy crunch.

3. Fry the Wings

  • Heat the Oil. Heat vegetable oil to 350degF (or 175degC) in a large saucepan or deep fryer. You can test the temperature of oil without a thermometer by using a small piece of bread. If the bread browns within 30 seconds, then your oil is ready.
  • The wings should be fried in batches of 8-10 for 8-10 minutes until crispy and golden brown. To ensure even cooking, flip them halfway through. Drain them on a plate lined with paper towels after removing them from the oil.

4. Honey BBQ Sauce Recipe:

  • Combine Sauce Ingredients. In a small pan, combine barbecue sauce, honey and melted butter. Add smoked paprika. Garlic powder, onion powder, cayenne pepper (optional).
  • Stir occasionally. Heat sauce on medium heat for 3-4 minutes. Allow it to simmer for a few minutes until the sauce becomes thicker. If needed, adjust the seasoning. Add more honey to increase sweetness or more BBQ sauce to add smokiness.

5. Toss wings in sauce:

  • Coat the wings: Place the fried chicken wings in a large bowl. Pour the Honey BBQ Sauce over the wings and toss them to coat evenly.

6. Serve and enjoy:

  • Garnish – To add extra flavour and make the wings look nice, garnish them with sesame or green onion.
  • Serve them as is, or dip them in ranch dressing or blue cheese dressing.
