- For best results, use lean ground meat. I choose 85% or 90% of Angus.

- In a large pot, cook ground beef with onion chopped. Crumble and stir occasionally until brown. Add jalapeno during the last few minutes. To remove excess fat, I use paper towels and tongs to absorb it.
- To the pot, combine tomato, chile, beef stock, tomato sauce, and all the other ingredients, seasoning with salt and pepper.
- Cover the pot and simmer for 30 minutes, stirring every so often.
- The corn, pinto beans, and black beans should be heated in the pan until they are hot.
- Thin the soup by adding 1/2 cup water if necessary. Add cilantro and lime now if using.
- Serve hot with desired toppings.

Yes! Pour a Crock-Pot version, brown the beef and onions, and add garlic. Drain the fat and pour the mixture into the slow cooker. Add tomatoes, tomato sauce, tomato broth and spices.
