Ingredients
- Whole chickens weighing 2 (3 1/2) pounds, with the wingtips removed
- Salt 2 teaspoons
- 1 teaspoon dried tarragon
- 1 tablespoon paprika
- Black pepper, 1/4 teaspoon
- Olive oil 4 teaspoons
- Lemons, thinly cut and seeded
Directions
Step 1
- Preheat the oven to 450°F (230°C). Make an aluminum foil liner for a large baking sheet.
- Step 2
- Make sure the chicken is breast side down and placed on a flat surface. Keeping the tail at the end, cut along the backbone on both sides. Remove the backbone.
- Step 3
- Grab both sides of the bird and open it up like a book. Turn the breasts up. Take your hands and run them down each breast side until you hear the crack. Transfer the chicken to the baking sheet and flatten it. Repeat with the other chicken.
- Step 4
In a small bowl, combine salt, tarragon paprika and pepper. Add oil. Make sure the chicken skin is clean by running your fingers under it and then applying tarragon paste under it. Slide lemon slices in one layer under the skin.
Step 5
Roast for 35 minutes or until the skin is crispy and an instant-read thermometer in the thickest part of the breast registers 165° F. Allow each chicken to stand for 5 minutes before slicing it into 8 pieces.
