Southern Baked Chicken
Southern-style baked chicken is a classic comfort food that has a timeless appeal.
The family has enjoyed this recipe for generations. It has evolved, but it still has the same irresistible smell and flavorful, tender meat. This recipe is easy to follow, reminiscent of Grandma’s kitchen and full of love.
It’s not true that I am a Southerner. I do make soul food, but I don’t have any roots in the south. My Caribbean heritage has been infused into everything I cook because I was raised and born in Jamaica. Southern cuisine is my favourite because it’s so comforting and delicious. This southern-style baked chicken is exactly that. This dish is soul food at its core. I added some Caribbean flavours like fresh thyme.
Ingredients:
1 lb dark meat chicken, such as drumsticks or wings (about 12),1 tsp all-purpose seasoning like adobo and always
1 tsp Herbs de Provence
Kosher Salt 1 tsp
1 tsp smoked paprika
Table Blend @aldiusa 1 tsp Salt-Free
Olive oil 1 tbsp
White onion, 1/2 a white onion, chopped
Red bell peppers, 1/2 lb.
Half a green bell pepper, sliced
Better than Bouillon Chicken Base 1 tbsp
Half a cup of water
1 tbsp flour
Fresh thyme
Fresh rosemary
3 tablespoons of butter
This recipe is delicious even without the peppers!
Directions:
- Use paper towels to dry the chicken after washing.
- In a large bowl, drizzle olive oil over the chicken and add seasoning mix, peppers and onion. Transfer to a stoneware pot with a tight-fitting lid.
- Add butter and fresh thyme to the chicken. Pour over the chicken a mixture of water, Better than Bouillon and flour.
- Cover and bake for 1 hour at 375°F.
- Cook for 30 minutes at 400 degrees until the chicken is brown and the gravy is thickened.
- Remove chicken from the oven and generously baste it with gravy.
