Cajun seasoning is:

- Add 1/4 teaspoon of chili powder for an extra kick.
Instructions
Step 1: Prepare Potatoes. Wash the potatoes well and scrub off any dirt. You can peel them or leave their skins on for a rustic look, so after cleaning your potatoes, cut them up into fries. If you want to make fries like Popeyes, then aim for a 1/4-inch thick slice.
Step 2: Soak Potatoes Place the sliced potatoes in a large, cold bowl. Let the potatoes soak for 30 minutes, so the starch in the potatoes is removed by soaking them. This helps to make the fries crisp when they are fried.
Step 3: Prepare the Cajun Seasoning. While your potatoes are soaking in water, prepare the Cajun seasoning. Combine the paprika with the garlic powder, onion, cayenne, black pepper and thyme, then stir the spices until they are evenly mixed, and then set aside the seasoning.
