PASTA CREAMY CHICKEN WITH SPINACH
PASTA CREAMY CHICKEN WITH SPINACH
This comforting creamy pasta with chicken and spinach is the perfect dinner. This recipe is easy to make, and you can have it on your dinner table in less than 30 minutes.
Why you will love it
The spinach chicken pasta can be thrown together quickly on busy weeknights, then the golden chicken will melt in your mouth, and the spinach adds freshness. It was a hit with picky eaters!
A little Dijon mustard and lemon juice will add some je ne sais quoi to keep the creamy sauce from becoming one-dimensional, so i love adding Dijon to various recipes. Dijon is one of my favourite ways to add flavour.
What you will need
- Pasta – I use penne pasta, but any similar size pasta can be used.
- Cut chicken breasts into bite-sized pieces.
- Flour is essential for a crispy crust on chicken.
- Butter and olive oils – for pan-frying
- Garlic – a more savoury flavour
- Use a dry wine (e.g. sauvignon blanc) or chicken broth for a more elegant version.
- This duo of Dijon mustard and lemon juice is the ultimate in flavour enhancement.
- Italian seasoning is a blend of dried herbs, that can be used for a variety of purposes.
- To make sauces luxurious, use heavy cream.
- Spinach is a great way to get some extra greens.
- Parmesan cheese is the perfect topping. Grate your cheese!
This recipe uses the following tools.
- The chicken should be cooked to 165F. Instant read thermometers are the best way to ensure that your food is always cooked perfectly.
- This butter dish has markings that make it easy to measure butter!
- This is the pan I use to cook this pasta.
Make chicken spinach pasta.
Here is a step-by-step photo guide. The recipe card has all the ingredients and instructions.
Boil the pasta. While you are waiting, chop up the chicken and season it with salt and pepper. Then, dredge it in flour. In a skillet, heat the butter and oil. The chicken should be cooked until it is golden brown and then transferred to a serving plate. Add the lemon juice, Dijon and Italian seasoning, along with the broth, garlic, and Dijon to the pan.
Allow it to bubble for one minute, and remove the brown bits. Add the cream and the spinach. Continue to simmer until the sauce is thickened and the chicken has been cooked. Add the pasta to the sauce, add extra salt and pepper, then stir in the Parmesan.
Substitutions, variations and substitutions
- It is not recommended to substitute heavy cream with anything less fattening. The taste and texture will be changed significantly.
- Use frozen spinach, so thaw it first and squeeze out all the water.
- If you like sun-dried tomatoes, adding some is a great idea!
What to serve with Chicken Spinach Pasta
- Finish your meal with a fresh slice of bread or a dinner roll, so i prefer French or sourdough. Or, make it a feast by adding my Extra Cheesy garlic bread.
- Do you have a craving for a salad? The Spring Mix with Easy Italian Dressing or Honey Mustard Dressing is a great combination.
Storage of leftovers
- In a covered container, that store leftover pasta in the refrigerator for up to 3-4 days.
- Reheat on low heat. But remember, it tastes best when fresh. Reheating the sauce will make it less tasty, as the spinach will continue to wilt. It may need another splash of cream.
- This one is not recommended for freezing.
