Ingredients
- 10 ounces egg noodles
- 2 tablespoons of unsalted butter
- 1 medium sweet onion, diced
- 2 cloves garlic, minced
- Thawed 1 1/2 cups frozen carrots and peas
- Half a teaspoon of kosher salt
- Black pepper, 1/4 teaspoon
- 2 Tablespoons of all-purpose flour
- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- Cut 1 1/2 cups of cooked chicken breast into small cubes
Instructions
- Follow the package instructions to cook noodles until they are al dente.
- Melt the butter in a large pan over medium heat. Add the peas, carrots, onion and garlic; season with salt and pepper. Cook for 3 minutes or until the onions are translucent and soft. Mix in the flour.
- Bring the heavy cream and chicken broth to a rolling boil. Reduce the heat to a simmer. Stir frequently until the sauce is thickened. This should take about 5 minutes.
- Add the pasta to the skillet along with the chicken. If necessary, season the dish with more salt and/or pepper.
