Ingredients
Chicken Marinade
- 2 lbs chicken wings
- Yellow mustard 2 tbsp
- Add 1 tsp of kosher sea salt only if Lemon Pepper seasoning contains salt.
- 1 tbsp Lemon Pepper Seasoning
- 1 tsp of paprika
- 1 tsp of garlic powder
- 1 tsp of onion powder
- 1 egg
Seasoning Mix
- 1 cup of flour
- 1 cup cornstarch
- Add 1 tsp of kosher sea salt only if Lemon Pepper seasoning contains salt.
- Half a tablespoon of lemon pepper seasoning
- Baking powder, 1/2 tbsp
Lemon Pepper Sauce
- 12 tbsp Butter
- Zest of One Lemon
- Lemon Juice 2 tablespoons
- Half a tablespoon of lemon pepper seasoning
- Add 1 tsp of kosher sea salt only if Lemon Pepper seasoning contains salt.
- Honey 1 tbsp
- 1 tbsp of parsley
Instructions
- Add the chicken wings to a bowl and season them with lemon pepper seasoning. Also, add paprika and other seasonings such as garlic powder, onion, mustard, and yellow mustard. If the lemon pepper seasoning you are using is not salty, add 1 teaspoon of kosher sea salt. Mix well and let marinate for at least one hour or overnight.
- Add flour, cornstarch and lemon pepper seasoning to a large bowl. If your lemon pepper is not salted, add 1 teaspoon of kosher sea salt to the seasoning mixture. Mix well.
- Then, coat the chicken wings with the seasoning mixture. To help the seasoning dredge adhere to the wings, use your hands to pack it in. Repeat this process until all the wings have been coated with the seasoning mix.
- Oil in a heavy-bottomed pot should be heated to 350F. Fry the chicken wings in batches for 10-12 mins or until crispy and golden brown. The internal temperature must also reach 165F. Make sure the oil temperature doesn’t drop below 325F. If the temperature of the oil is too low remove the wings until it reaches the correct temperature.
- Melt butter in a small pan on low heat. Add the lemon zest, lemon sauce, honey and parsley. Whisk to combine. If desired, remove the milk solids from the sauce with a spoon before adding it to the wings.
- Add the sauce to a bowl and add the wings. Toss the wings to coat or brush sauce on the wings as you wish. Enjoy!

KEY TIPS
Watch out for Salt! I use Lemon Pepper seasoning from the store to make the Lemon Pepper Butter Sauce. However, some brands are saltier than others. Check the label of any store-bought Lemon Pepper seasoning to see if there is salt. If so, leave out the kosher sea salt from the recipe. Your Lemon Pepper Chicken Wings should not be too salty.
Dredge your Chicken Wings Thoroughly. Individually dredge every chicken wing into the dry seasoning mixture, so there are no spots of dryness. Pack the dry seasoning mix into the chicken using your hands. (I prefer to squeeze it in). This will ensure that the batter sticks to the wing.
Monitor Oil Temperature. Do not allow your oil to drop below 325F while frying. You should use a thermometer in order to monitor the temperature. Fry your chicken wings in batches if you notice the temperature is dropping below 325F. Low temperatures will lead to soggy, oily wings.
Brush on the Lemon Pepper Sauce. If you want your Lemon Pepper Chicken Wings extra crispy, do not pour or toss them in the sauce. Instead, lightly brush it on. The Lemon Pepper Chicken Wings will stay crisper for longer if you do this.
Store and Reheat
You can store any leftover Lemon Pepper Chicken Wings in the fridge for up to 4 days.
Air fryer is my preferred method of reheating the Lemon Pepper Chicken Wings! They can be air-fried at 350degF until they are crispy and warmed. You can also reheat the burgers in an oven at 350 degrees F for 15 to 20 minutes.
