This recipe for salsa chicken in the Instant Pot makes a simple weeknight meal easier. Taco seasoning, salsa and frozen chicken breasts combine to make a delicious Mexican meal. The meat can be used for tacos or burritos bowls. It can also be used as a topping on baked potatoes. So many possibilities! This was used the first night to make chicken quesadillas. The second time, I used it to top baked potatoes with pickled jalapenos and sour cream.

Ingredients
The original recipe (1X) yields 2 Servings
- Buy 1 pound of frozen skinless and boneless chicken breast halves
- Taco seasoning mix, 1 (1 ounce) packet
- Half a cup of salsa
- 1/2 cup low-sodium chicken broth
Directions
- Place the chicken breasts into a multifunctional cooker (such as an Instant Pot). Taco seasoning on all sides. Pour the salsa and chicken broth over the top.
- Close the lid and lock it. Set the timer to 15 minutes. Pressure should build up in 10 to 15 minutes.
- Release the pressure by using natural release according to the manufacturer’s instructions. This should take about 20 minutes. Remove the lid by unlocking it.
- Serve the chicken with shredded meat.
Recipes
If desired, you can substitute water for the chicken broth.
You can reduce the cooking time by 8-10 minutes if you are using thawed breasts.
This recipe works with both quick-release and Natural-release.
