Grilled Chicken Skewers With Peanut Sauce is a delicious combination of marinated, tender chicken that has been charred perfectly and served with creamy, savory peanut sauce. Ingredients:
For the Chicken Skewers
- 2 lbs of boneless and skinless chicken breasts cut into 1-inch cubes
- Olive oil 2 tablespoons
- 2 tablespoons soy sauce
- Honey, 1 Tablespoon
- Freshly squeezed lime juice, 1 tablespoon
- 2 cloves garlic, minced
- Ginger, 1 tablespoon ground
- To taste: salt and pepper
Peanut Sauce
- Half a cup of creamy peanut butter
- 3 tablespoons soy sauce
- Honey 2 Tablespoons
- 2 tablespoons lime juice
- 1 Tablespoon rice vinegar
- Sesame Oil 1 Tablespoon
- Half a teaspoon of garlic powder
- Half a teaspoon of ground ginger
- Add 2-3 tablespoons of warm water to adjust the consistency.
- Chili paste or red pepper flakes (optional) for heat
Garnish
- Chopped cilantro (optional)
- Chop peanuts (optional).
- Lime wedges
Instructions:
1. Prepare the chicken marinade:
- Combine the olive oil with the soy sauce, lime juice and honey in a medium bowl. Add the minced ginger, garlic and salt.
- Toss the chicken cubes in the marinade to evenly coat. To let the flavors blend, cover the bowl and place it in the refrigerator for 30 minutes or more. The more you marinate the chicken, the more flavorful it will be.
2. How to Make Peanut Sauce
- In a separate mixing bowl, combine the peanut butter with the soy sauce and honey. Also, add lime juice, rice wine vinegar, sesame seed oil, garlic powder and ground ginger.
- The sauce will reach the desired consistency when you add a small amount of warm water at a time. The sauce should be thick but still pourable. Stir in chili paste or red pepper flakes for extra heat, depending on what you prefer.
- Set aside the peanut sauce.
3. Prepare the Skewers
- To prevent burning, soak wooden skewers in water for 30 mins. Metal skewers don’t need to be soaked.
- To ensure an even cooking, thread the chicken cubes on the skewers.
4. Grilled Chicken:
- Preheat your grill on medium-high heat (around 400degF/200degC). If you are using a grill, warm it up over medium heat.
- Grill the skewers for 4 to 5 minutes on each side or until they are golden brown and have grill marks. The chicken should reach an internal temperature of 165degF (74.2degC).
- You can also baste the grilled chicken with some of the marinade to give it extra flavor.
5. Serve:
- After the chicken has cooked, remove the skewers and place them onto a serving plate.
- Serve the peanut sauce as a dipping sauce or drizzle generously on top of the skewers.
