Ingredients:
Grilled Chicken Recipe
- 2 skinless and boneless chicken breasts
- Olive oil 1 tablespoon
- 1 tablespoon lime juice
- 1 tablespoon chili powder
- 1 teaspoon of garlic powder
- Half a teaspoon of cumin
- Paprika, 1/2 teaspoon
- To taste: salt and pepper
Nachos for the Nachos
- 8-10 cups of tortilla chips (preferably thick-cut to ensure durability)
- 2 cups of shredded Mexican cheese blend (or Monterey Jack or cheddar)
- One cup of black beans, rinsed and drained (optional).
- Red onion finely diced, 1/2 cup.
- 1/2 cup cherry tomatoes, halved
- Optional: 1/4 cup jalapenos sliced (optional for heat).
- Fresh cilantro chopped to 1/4 cup
- Half a cup of sour cream (for drizzling).
- 1/4 cup guacamole is optional.
- Salsa or pico de gallo, for serving
Instructions:
1. Grilled Chicken:
- Preheat your grill on medium-high heat.
- Combine the olive oil with the lime juice, cumin powder, paprika and salt in a small bowl. This mixture should be rubbed on both sides of the chicken breasts.
- Grill the chicken on each side for 6-8 minutes or until it reaches an internal temperature of 165degF (74.4degC).
- After the chicken is cooked, let it rest on the grill for five minutes. Then, slice it into thin strips.
2. Prepare the Nacho base:
- Preheat your oven to 375degF.
- Spread the tortilla chips evenly on a large baking tray or dish that can be used in an oven. Be sure to evenly distribute the tortilla chips so that the cheese can melt.
- Sprinkle half the cheese evenly over the chips, and then add the grilled pieces of chicken on top. Sprinkle black beans, red onions, and jalapenos on top of chicken and cheese to add flavor.
3. Bake the Nachos
- Bake the dish or baking sheet in the oven for 10-12 mins, or until it is bubbly and the cheese has melted. Be sure to keep an eye on the cheeses so they don’t get burned.
4. Add toppings to your meal:
- Top the nachos with chopped fresh cilantro, cherry tomatoes halved, and other toppings such as sour cream, salsa, or guacamole.
5. Serve:
- Serve them immediately while they are still warm and cheesy! Serve them with extra salsa or guacamole.
Tip and variations:
- Add some heat: To make it spicy, you can add some sliced jalapenos or drizzle hot sauce on top of the nachos.
- Vegetarian option: To make a vegetarian version of this dish, you can substitute the chicken with peppers and onions sauteed in olive oil, add seasoned tofu, or grill portobello mushroom for texture.
- For extra flavor and melting power, use a mixture of Monterey Jack, Monterey cheddar, or pepper jack.
- Toppers: Have fun with the toppings. You can customize your nachos by adding sliced avocados, black olives or diced bell peppers.
- Make-Ahead: The grilled chicken can be prepared ahead of time and stored in the refrigerator for up to three days. Once you are ready to bake the nachos, assemble them and bake.
