Grilled Bruschetta Chicken

The perfect summer meal is grilled chicken bruschetta with simple seasonings and mozzarella cheese. Fresh tomatoes and basil are also added.

Grilled Bruschetta Chicken

Ingredients

  • 4 skinless boneless chicken breasts, pounded into an even thickness (about 1 inch).
  • 2 Tablespoons of oil
  • 1 tablespoon Italian seasoning (OR 1/4 teaspoon of each dried basil oregano and dried thyme).
  • 1 teaspoon of garlic powder
  • Half a teaspoon of salt
  • Black pepper, 1/8 teaspoon
  • 4 slices mozzarella cheese

Tomato Basil Topping

  • 3 Roma tomatoes – diced
  • Salt and pepper to taste
  • Fresh lemon juice, 2 teaspoons
  • Fresh basil, finely chopped: 2 tablespoons

Instructions

  1. Combine the chicken, oil and Italian seasoning in a large mixing bowl, then add garlic powder and black pepper, then stir well to coat the chicken with seasonings.
  2. Grill the chicken for 6-8 minutes per side on medium-high heat or until it is cooked through.
  3. Prepare the topping while the chicken is cooking, then combine tomatoes, basil, salt, pepper and lemon juice in a medium-sized bowl. Stir well.
  4. After the chicken is fully cooked, add a slice or two of mozzarella to each breast and continue cooking for another minute until the cheese melts.
  5. Serve the chicken immediately with the tomato basil topping.

Notes

The Bruschetta topping is best made ahead and kept in the fridge.
