Grilled Bruschetta Chicken
The perfect summer meal is grilled chicken bruschetta with simple seasonings and mozzarella cheese. Fresh tomatoes and basil are also added.

Ingredients
- 4 skinless boneless chicken breasts, pounded into an even thickness (about 1 inch).
- 2 Tablespoons of oil
- 1 tablespoon Italian seasoning (OR 1/4 teaspoon of each dried basil oregano and dried thyme).
- 1 teaspoon of garlic powder
- Half a teaspoon of salt
- Black pepper, 1/8 teaspoon
- 4 slices mozzarella cheese
Tomato Basil Topping
- 3 Roma tomatoes – diced
- Salt and pepper to taste
- Fresh lemon juice, 2 teaspoons
- Fresh basil, finely chopped: 2 tablespoons
Instructions
- Combine the chicken, oil and Italian seasoning in a large mixing bowl, then add garlic powder and black pepper, then stir well to coat the chicken with seasonings.
- Grill the chicken for 6-8 minutes per side on medium-high heat or until it is cooked through.
- Prepare the topping while the chicken is cooking, then combine tomatoes, basil, salt, pepper and lemon juice in a medium-sized bowl. Stir well.
- After the chicken is fully cooked, add a slice or two of mozzarella to each breast and continue cooking for another minute until the cheese melts.
- Serve the chicken immediately with the tomato basil topping.
Notes
The Bruschetta topping is best made ahead and kept in the fridge.
