Ingredients for 4 servings:

  • For the Chicken
    • 4 skinless and boneless chicken breasts
    • 1 cup of almond flour (or breadcrumbs if you want a gluten-free version).
    • Half a cup of grated Parmesan Cheese
    • 1 tsp of garlic powder
    • 1 tsp of onion powder
    • 1 tsp dried Oregano
    • Taste salt and pepper
    • 2 large eggs
    • 2 tablespoons olive oil (for frying).
  • Asparagus, a vegetable:
    • Fresh asparagus 1 lb, trimmed
    • 1 tbsp olive oil
    • Taste salt and pepper
    • Optional: 1 tsp of lemon zest
    • Fresh lemon juice, 1 tbsp (for serving).
  • Optional Garnish
    • Fresh parsley chopped
    • Lemon wedges

Instructions:

  1. Prepare the chicken:
    • Mix in a shallow dish the almond flour, Parmesan, onion powder and garlic powder. Add salt, pepper, Oregano and parsley.
    • Whirl the eggs in a shallow dish.
    • Press down on each chicken breast to ensure that it adheres well. Set aside.
  2. Cook the Chicken
    • Heat 2 tablespoons of olive oil in a large pan over medium heat.
    • When the oil is hot enough, add the breaded breasts. Cook for 5-6 minutes on each side or until the chicken has a golden brown crust on the outside and is cooked through inside (internal temp should be 165degF).
    • As soon as the chicken is cooked, please remove it from the pan and allow it to rest. Meanwhile, cook the asparagus.
  3. How to cook asparagus:
    • Heat 1 tbsp of olive oil in a skillet on medium heat while the chicken cooks.
    • Season the asparagus with salt and pepper.
    • Stirring occasionally, cook for 4-5 mins until asparagus is crisp but not mushy. If the pan becomes too dry, you can add some water.
    • Sprinkle lemon zest on top of the dish at the end to add flavour.
  4. Serve:
    • Serve the chicken crispy on plates with asparagus.
    • Sprinkle fresh lemon juice on the chicken and asparagus to add a fresh, zesty flavour.
    • Serve with lemon wedges and garnish with parsley.

  • Vegetable variations: You can substitute asparagus with other vegetables like broccoli, green beans or zucchini, depending on your preferences.
