These Chicken Taquitos have a crispy texture, are flavorful and are filled with chicken shredded that has been seasoned. These taquitos make a great party appetizer or quick dinner. They are baked perfectly, so they’re a healthier option than fried ones. They’ll be a big hit when paired with your favorite dipping condiments, such as Guacamole or salsa.
Ingredients:
To make the Chicken Filling:
- 2 cups cooked, shredded chicken breast (about 2 medium breasts of chicken or use rotisserie poultry)
- 1 cup of shredded Mexican blend cheese or cheddar cheese
- 1/2 cup cream cheese, softened
- Taco seasoning (store-bought or homemade).
- Green onions – 1/2 cup, chopped
- Add 1/2 cup of salsa for an extra kick.
- Chop 1 tablespoon of fresh cilantro (optional).
- To taste: salt and pepper
Taquitos
- 10-12 small corn tortillas or flour tortillas.
- Brushing: 2 tablespoons of olive oil or melted butter
You can serve:
- Salsa, Guacamole or any other dipping sauce you choose
Instructions:
1. Prepare the chicken filling:
- Combine the chicken, cheese, cream, green onions (if you are using salsa), salt, pepper, and cilantro in a medium-sized bowl. Mix all ingredients until well combined. The cream cheese helps bind the filling together and gives it a creamy texture.
2. Prepare the Tortillas
- Warm up the tortillas so they are more flexible. Wrap flour tortillas in damp paper towels and microwave for 20-30 seconds. You can heat corn tortillas in a dry pan for 10 seconds on each side. This will prevent them from breaking when they are rolled.
3. Assemble Taquitos
- Place the tortilla flat on the surface. Spoon about 2 to 3 tablespoons of chicken mixture in the middle of the tortilla.
- Roll the tortilla around the filling tightly, making sure the ends are tucked slightly in to secure the filling.
- Continue with the rest of the tortillas and chicken mix.
4. Bake the Taquitos
- Preheat your oven to 200degC (400degF) and line the baking sheet with parchment.
- Place the taquitos with the seam facing down on the baking tray. Brush the tops with olive oil or butter melted to crisp them up during baking.
- Turn them halfway through cooking to ensure they are evenly cooked. Bake for 20-25 mins or until golden brown.
5. Serve:
- After the taquitos have been baked, please remove them and allow them to cool down before serving.
- Serve with salsa, cream cheese, Guacamole or other dipping sauces of your choice.
Tip and variations:
- Option to Prepare Taquitos Ahead: Once you have rolled the taquitos, store them in the refrigerator for up to one day before baking. After rolling, you can freeze the taquitos and bake them straight from the frozen state (add a few minutes to the baking time).
- Add heat: If you enjoy spice, add a few chopped jalapenos to the mixture.
- Vegetarian option: You can substitute the chicken for black beans, refried beans, or sauteed vegetables to make a vegetarian version of these taquitos.
- Try using different cheeses, such as Monterey Jack or Pepper Jack. You can also use cream cheese to give it a creamy texture.
