- Lemon juice, 1 tablespoon
- Olive oil 2 teaspoons
- 1 minced garlic clove
- To taste: salt and pepper
To Assemble the Wraps :
- 4 pita bread rounds (or flatbreads).
- 1 cup cherry tomatoes, halved
- Half a red onion thinly sliced
- Sliced thinly, 1/2 cucumber
- Half a cup of mixed greens (or lettuce)
- Fresh parsley chopped (for garnish).
Instructions:
1. Marinate the chicken:
- Combine the olive oil with the lemon juice, oregano leaves, minced garlic, cumin, smoked paprika and salt in a large bowl. The ingredients should be combined by whisking them together.
- The chicken thighs can be cut into strips or bite-sized pieces. Add the chicken to the marinade and coat with it. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, but preferably for 2-4 hours, to let the flavors develop.

3. Cook the Chicken
- Grill Method: Heat your grill to medium-high heat. If using skewers, thread the marinated pieces of chicken onto the skewers. Alternatively, cook them directly on the grill. Grill the chicken on each side for 5 to 7 minutes or until the chicken is fully cooked. Rotate the skewers if you are grilling with skewers to ensure even cooking.

4. Warm up the pita:
- Warm the pita while the chicken is cooking. You can either heat them on medium heat in a dry pan for 1 minute per side or in an oven preheated to 350degF (177degC).
