These Chicken Skewers make a great summer recipe. They are delicious over a rice pilaf or with a Greek Salad. The chicken is marinated with yogurt, garlic, olive oil and spices and then grilled on an open flame. Only threading meat and onions on skewers takes time. Time is short? Grill the chicken pieces without skewers. Slice the red onions into large wedges and place them directly on the grill. Make more than you need. When I first made these kabobs, I ran out of food.
What you’ll need to make grilled chicken Kabobs
This recipe calls for boneless, skinless thighs. They are more flavorful and juicy than boneless, skinless breasts. They also hold up to acidic marinades better; marinades based on yogurt or lemon can turn boneless, skinless breasts into leather. The thighs cook much more quickly and without drying out. Step-by-Step instructions
Step 1: Prepare the Marinade
Combine the yogurt with olive oil, paprika (or chipotle), cumin, cinnamon and red pepper flakes. Also, add salt, pepper, garlic, lemon zest and lemon juice.
Mix the ingredients.
Step 2: Prepare the chicken and thread onto skewers
Trim off any excess fat or gristle. Do not worry about removing every bit of fat, as most will melt on the grill. Cut the meat into bite-sized pieces. It’s easier to use kitchen shears than a knife.
Alternately, thread the chicken pieces and red onions onto the skewers. The best skewers to use are metal ones, as they will not catch fire when grilling. If you’re using wooden skewers, soak them for 30 minutes in water first to make sure they don’t burn on the grill.
Step 3: Marinate your chicken
Put the kabobs onto a baking tray lined with aluminum foil and brush the marinade over them, making sure to coat the meat well. Let the kabobs marinate in the refrigerator for 8 hours or even overnight.
Step 4: Grill Kabobs
Grill the kabobs on a medium heat. Grease the grill well and grill until golden brown.
