Ingredients for Chicken Quesadillas
- 6 Tbsp. Vegetable oil divided into 6 Tbsp.
- 2 bell peppers thinly sliced
- Half an onion thinly sliced
- Kosher salt
- 1 lb. Boneless skinless chicken breasts are cut into strips.
- 1/2 tsp. chili powder
- 1/2 tsp. Ground cumin
- 1/2 tsp. Oregano dried
- 4 medium flour tortillas
- Monterey Jack shredded 2 c.
- 2 c. shredded cheddar
- 1 ripe avocado, sliced
- 2 scallions thinly sliced
- Serve sour cream
Directions for Chicken Quesadillas
Step 1
Heat 1 tbsp. Neutral oil is in a large skillet on medium heat. Neutral oil, then add the peppers, onion and salt, then cook until soft, 5 minutes, and transfer onto a serving plate.
Step 2
Add 1 tbsp. Heat the pan over medium heat, then season chicken with cumin, chili powder, dried oregano and 1/2 teaspoon of salt. Cook, stirring frequently, for 8 minutes, until golden brown and cooked through, and transfer onto a plate. Wipe skillet.
Step 3
Add 1 tbsp. Neutral in skillet. Add one flour tortilla to the skillet, then sprinkle the top of the tortilla heavily with both cheeses, then top the other half of the tortilla with 1/4 of the cooked chicken mixture. 1/4 of pepper-onion mix, then a few slices of avocado and a sprinkle of scallions. Fold over the other half and cook until golden brown, 3 minutes on each side.
Step 4
Repeat the process with the remaining tortillas, chicken mixture, pepper-onion mix, avocado and scallions, so this will make four quesadillas.
