Ingredients:
For the Chicken
- Chicken breasts, 1 lb, boneless and skinless (cut into slider-sized pieces, tenders or small pieces).
- Breadcrumbs (Panko is best for added crunch).
- Half a cup of grated Parmesan Cheese
- 1 teaspoon of garlic powder
- 1 tablespoon dried basil
- Half a teaspoon of salt
- Black pepper, 1/2 teaspoon
- 2 large eggs, beaten
- 1 cup all-purpose flour (for dredging).
- Olive oil (for frying).
Sliders
- Twelve slider buns.
- 1 cup of marinara (homemade or store-bought)
- 1 1/2 cups shredded mozzarella cheese
- Parmesan cheese, 1/4 cup
- Fresh Basil or parsley (optional) for garnish
Instructions:
1. Prepare the Chicken:
- Preheat your oven to 375degF.
- The chicken breasts can be cut into strips or small pieces to fit in the slider buns.
- Set up the breading station. In one bowl, put the flour, in another, the eggs, and in the third, the breadcrumbs with the garlic powder, dried Basil, salt and pepper, as well as the Parmesan.
- Then, coat each piece of Chicken with breadcrumbs, pressing gently so that it is evenly coated.
2. Fried Chicken:
- Heat a large pan with a few tablespoons of olive oil on medium heat.
- Cook the chicken pieces until crispy and golden brown in batches. Each side should take about 3-4 mins. The internal temperature should be 165degF. Transfer the cooked Chicken to a plate lined with paper towels to drain any excess oil.
3. Assemble your Sliders
- Slice the slider buns into half while the Chicken is frying. Place the bottom halves of the slider buns on a baking pan or dish.
- Place a small amount of marinara on the bottom of each bun.
- Add a piece of crispy Chicken to each bun and top it with mozzarella cheese, Parmesan cheese.
4. Bake the Sliders
- Place the top halves of the buns over the Chicken and cheese.
- Cover the baking dish in foil and bake it for 10-12 minutes or until the cheese has melted and is bubbling. Remove the foil from the baking dish during the final 2-3 minutes to get extra crispiness.
5. Serve:
- Garnish with parsley, or Basil leaves to add color and flavor.
- Enjoy the hot chicken Parmesan sliders!
Tip and variations:
- Make it Spicy: Sprinkle some red pepper flakes on top of the breadcrumb mix or drizzle a bit of hot sauce over the Chicken before adding cheese to give it a spicy kick.
- Vegetarian version: Replace the Chicken with slices of eggplant for a vegetarian variation. The same method can be used to fry and bread the eggplant.
- Grilled Chicken: If you want a lighter alternative, then grill your Chicken instead of deep-frying it. Before grilling, season it with Italian herbs. Brush a little oil on the Chicken.
- Homemade Marinara Sauce. If you like homemade sauces, you can make them easily with crushed tomatoes and garlic. You can also add a little sugar. For a rich, fresh flavor, simmer for 20-30 minutes.
- Prepare the breaded Chicken ahead of time. Store it in the refrigerator. Once you are ready, bake the assembled sliders.
