Chicken Meatball Skewers

Ingredients:

Chicken Meatballs

  • 1 lb of ground chicken
  • 1/4 cup breadcrumbs
  • Parmesan cheese, 1/4 cup
  • Fresh parsley chopped to 1/4 cup
  • 2 cloves garlic, minced
  • Half a teaspoon of onion powder
  • Half a teaspoon of garlic powder
  • Red pepper flakes (optional): 1/4 teaspoon
  • Half a teaspoon of dried oregano
  • To taste: salt and pepper
  • 1 large egg
  • Use 2 tablespoons of olive oil to brush or drizzle

  • Metal or wooden skewers. If using wood, soak it in water for 30 minutes to avoid burning.

You can serve:

  • Tzatziki, ranch dressing or marinara sauce as a dip (optional).

Instructions:

1. Prepare the Meatball Mixture

  • Combine the ground chicken, Parmesan, Parsley, Garlic, Onion Powder, Garlic Powder, Red Pepper Flakes (if using), Dried Oregano and Salt in a large bowl.
  • Stir everything until it is well combined. The mixture should be sticky and moist but still hold its shape once formed into meatballs. You can add more breadcrumbs if the mixture is wet.

2. Form Meatballs

  • Roll the mixture with your hands into small meatballs of 1 to 1.5-inch diameter. You can form 12-15 meatballs, depending on their size.

3. Assemble Skewers

  • If you are using wooden skewers to thread your meatballs on, make sure that they are slightly spaced apart. (About 2-3 meatballs each skewer).
  • The process is the same if you are using metal skewers. Just slide the meatballs on the skewers.

4. Preheat the grill or oven:
