Ingredients
- 1 Pound Asparagus
- Chicken breasts thinly sliced, 1 pound
- 1 Tablespoon Italian Seasoning
- Salt and pepper
- Divide 2 Tablespoons of olive oil
- One small onion, diced
- Sliced 8 Ounces Mushrooms
- 3 cloves garlic diced
- Use 2 Tablespoons of flour
- 2 cups Madeira wine
- 1 cup beef broth
- 1 cup mozzarella cheese shredded
Instructions
- Bring 2 inches of boiling water in a large pan to a rolling boil. Add the Asparagus and blanch it for 2 to 3 minutes. Drain the Asparagus, and then place it in an ice-water bath.
- Sprinkle Italian seasoning and salt on both sides of each chicken breast. Cook the chicken in olive oil on medium heat for 5-6 mins per side or until it is golden brown. Remove the chicken and set it aside.
- Add the garlic, onions, and olive oil. Cook for 2 to 3 minutes or until the vegetables are almost tender. Stir the flour into the vegetables and cook until coated.
- Add the Madeira Wine and bring it to a boil. Simmer until reduced, about 5 minutes. Add the beef broth to the sauce and continue simmering until it thickens.
- Add the chicken and Asparagus back into the skillet. Add the cheese on top and broil until bubbling and melted. Serve over mashed potatoes if desired.
