Chicken Fajita Bowls

Ingredients for 4 servings:

  • For the Chicken
    • 4 skinless and boneless chicken breasts or thighs (for juicier meat)
    • 2 tbsp olive oil
    • 1 tbsp of lime juice
    • 1 tsp Chili Powder
    • 1 tsp cumin
    • 1 tsp of paprika
    • Half a teaspoon of garlic powder
    • Half a teaspoon of onion powder
    • Taste salt and pepper
  • Fajita Vegetables:
    • Red bell peppers, 1 sliced
    • Yellow bell peppers, sliced
    • 1 onion, thinly sliced
    • 1 tbsp olive oil
    • 1 tsp cumin
    • 1 tsp Chili Powder
    • Taste salt and pepper
  • For the rice (optional).
    • 1 cup brown or white rice cooked (approximately 1/2 cup uncooked).
    • Water or chicken broth 2 cups
  • Toppings:
    • 1 avocado, sliced
    • 1 cup corn (fresh or frozen)
    • 1 cup black beans, rinsed and drained
    • Fresh cilantro chopped
    • Lime wedges
    • Salsa (optional) or sour cream
Chicken Fajita Bowls

Instructions:

  1. If you are using rice, cook it as follows:
    • Combine 1 cup of rice in a medium pan with 2 cups water (or broth). Bring to a rolling boil.
    • Reduce heat, cover and simmer until rice is cooked. (About 15 minutes for brown or white rice). Fluff the rice with a fork, and then set it aside.
  2. Prepare the chicken:
    • Mix the olive oil, cumin powder, paprika powder, garlic powder and onion powder in a small bowl.
    • Rub the seasoning evenly over the chicken breasts.
    • Grill pan or skillet on medium heat. Cook the chicken for 6 to 7 minutes on each side or until it is fully cooked (internal temp should reach 165degF). After a few moments, let the chicken rest and then cut it into strips.
  3. Sautee the Fajita Vegetables:
    • Heat 1 tbsp of olive oil in a large pan over medium heat while the chicken cooks.
    • Add the bell peppers, onions and salt to the skillet. Sauté for 5 minutes or until the vegetables become tender and charred. Season with cumin and chilli powder.
  4. Assemble Fajita Bowls
    • Start each bowl with a layer of rice.
    • Add some sauteed vegetables from the fajitas to the rice.
    • Layer with sliced chicken.
    • Add your favourite toppings, such as avocado slices, black beans or corn, fresh cilantro and lime juice.
  5. Serve:
    • The Chicken Fajita Bowls can be served immediately or stored in containers in the refrigerator for up to four days.

Tips:

  • Add more vegetables to the bowls for colour and flavour.
  • Add some heat by adding a few jalapenos or hot sauce.
  • The bowls can be used to prepare meals. Keep the ingredients in separate containers, and then assemble the bowls as you are ready to eat.
