This Chicken Curry is a great example of how simple doesn’t have to mean bland! This mild, creamy coconut sauce is made from scratch with only 5 ingredients! It is amazing how good it tastes for something that can be made so quickly.

Serve this dish with Soft No-Yeast Flatbreads (basically naan but easier to make!) to mop up the sauce.

Chicken Curry

Curries are known for their long ingredient lists in order to get flavourful sauces with rich spices. While we would all love to be capable of whipping up a Tikka masala and Butter Chicken from scratch whenever the urge strikes, it is simply not feasible.

Today, I will share the SIMPLE chicken curries that I have ever tasted, so this is a Western-style curry. It’s not an Indian curry or Thai curry. Here’s why I love it so much:

  • Very short ingredients.
  • Curry powder is all you need
  • Curry sauce with mild coconut flavour
  • From scratch in 30 minutes!

This curry will satisfy your craving for curry without spending hours in the kitchen!

What you need to make Everyday Chicken Curry

What goes into this Everyday Chicken Curry?

  • Curry powder is the only spice that you will ever need, so you can use any brand.
  • Fresh aromatics like garlic, ginger and onions can make a huge difference in quick curries. The same goes for making a quick Thai Green Curry or Red Curry with store-bought paste.
  • Coconut milk AND chicken broth/stock – to add creaminess and flavor. This recipe only uses 1 cup of coconut cream – it’s not meant to be a rich, heavy sauce.
  • This curry must be simmered for 12 minutes to bring out the flavors. It can be made using breasts, but you will need to tweak the steps; otherwise, the chicken will come out dry. !
  • Peas are optional. Another diced vegetable is also delicious!
  • Coriander/cilantro: a wonderful freshness and flavor boost. If you don’t like coriander, use green onions or chives instead.

Do not be fooled by the small list of ingredients. The curry sauce is delicious!

Curry Powders

These are what I have in my pantry right now, but I’ve tried many other brands before. Curry powder can be used in a variety of dishes, not only Indian curries.

How to make it

This chicken curry recipe is nothing new. One of the most important steps is to fry away the curry powder. The spices will be brighter, and there will be more golden bits at the bottom of the pan. This adds flavor to the curry sauce.

Make it Your Own!

The curry sauce is the main ingredient in this recipe, but you can add anything else to it. Here are a few options:

  • Make this recipe with other proteins, such as beef, lamb or pork. You can also use shrimp/prawns or fish, so directions are in the recipe notes.
  • Make it Spicy! This is not a hot curry, so to add heat to the curry, add cayenne or ground chili.
  • Use coconut cream in place of milk to make it richer, then use more coconut milk, and reduce the sauce for longer.
  • To thicken the sauce and give it a darker color, add tomato paste, so use approximately 1.5 tbsp.

This curry is great with my friend JP’s famous Iceberg Lettuce Salad or this Cabbage Salad without mayo.

Serve it with rice, mashed potatoes or noodles, then you can use the coconut curry sauce on almost anything!
