Chicken Chow Mein

Chow mein is a traditional Chinese dish made of egg noodles and stir-fried vegetables. Our favorite protein is chicken, but you can also use tofu or other meats. The noodles are pan-fried to get them crispy, and then they’re tossed with a delicious sauce. Chow mein can be an superb option for nights when you do not want to dirty many pans and make a mess in the kitchen.

This recipe makes a delicious homemade chow Mein sauce! To make the sweet and savory sauce for authentic chow mein, combine soy sauce with light sesame, oyster sauce and cornstarch.

How to Make Chow Mein:

  1. mix ingredients for the chow Mein sauce in a small bowl: oyster sauce (or sashimi sauce), sesame oil (or soy sauce), chicken broth and cornstarch. Set aside.
  2. Set aside. Cook noodles as per package instructions.
  3. Heat a large pan or wok. Cook the chicken in a pan with some oil until golden brown. Remove the chicken from the pan and set to one side.
  4. Add the carrots, cabbage, and garlic pressed and sauté for a couple of minutes until vegetables are softened.

Ingredients

Servings: 8 servings

  • 1 lb boneless and skinless chicken breast
  • 3 tbsp Oil
  • 12 oz cow mein noodles (uncooked noodles)
  • 2 cups cabbage
  • 1 large carrot, julienned
  • Green onions, 1/2 a batch
  • 2 cloves of garlic

Chow Mein Sauce

  • 6 tbsp oyster sauce
  • Low sodium soy sauce, 3 tablespoons
  • Three tablespoons of light sesame seed oil (not toasted).
  • 1/2 cup chicken broth
  • 1 tbsp of cornstarch
  • 1 tbsp of granulated Sugar

Instructions

  1. Use a whisk to combine oyster sauce, sugar granules, sesame, soy, chicken broth, and cornstarch in a small bowl. Set aside.
  2. After cooking your noodles, drain them and rinse them with cold water.
  3. Heat olive oil in a large pan or wok on medium heat. Cook your chicken breasts in oil till they are golden brown. Remove strips from the pan and set them aside.
  4. Sauté carrots, pressed garlic, and cabbage for a few minutes or until the veggies are softened.
  5. Pour sauce over the top and cook all ingredients for another 2 minutes. Pour the sauce on top and cook all ingredients for 2 more minutes.
  6. Serve your noodles hot and fresh straight from the pan!

Notes

Please note that the weight of cooked Chow Mein noodles should be about 1lb.
