Ingredients:
Filling for Chicken Alfredo:
- 2 cups cooked, shredded chicken breast (about 2 large chicken breasts).
- 1 cup Alfredo Sauce (homemade or store-bought)
- 1/2 cup shredded mozzarella cheese
- Parmesan cheese, 1/4 cup
- Half a teaspoon of garlic powder
- 1/4 teaspoon of onion powder
- Chop 1 tablespoon of fresh parsley (optional garnish).
The Bites:
- One package of wonton wrappings (about 30 wrappers).
- Brush with olive oil or cooking spray
- Salt is a taste
- To taste: freshly ground black pepper
For Dipping:
- Extra Alfredo sauce or marinara sauce for dipping
Instructions:
1. Prepare the chicken Alfredo filling:
- Combine the cooked chicken in a large mixing bowl with the Alfredo sauce. Add mozzarella cheese, Parmesan, garlic powder and onion powder. Season to taste.
- Mix everything until it is well blended and creamy. Set it aside.
2. Prepare Wonton Bites
- Preheat your oven to about 375degF. (190degC). Lightly grease a mini muffin pan with olive oil or cooking spray.
- Put a wonton in each muffin cup. Gently press it to create a cup-shaped wonton. You can use a little oil to brush on the tops of wrappers if you prefer a crispy bite.
3. Fill the Wonton Wrappers
- Fill each wonton with generously about 1 tablespoon of Chicken Alfredo.
- You can use any remaining filling to make additional bites or as a pasta topping.
4. Bake the Chicken Alfredo Bites:
- Bake the wonton wrappers in a preheated oven for 12-15 minutes or until they are crispy and golden brown. Be sure to keep an eye on the wonton wrappers so they don’t get burnt.
- Remove the baked bites from the oven once they are golden brown and crispy. Let them cool down a little.
5. Serve:
- Sprinkle freshly chopped parsley on the bites for color and freshness.
- Serve with Alfredo or marinara on the side.
Tip and variations:
- You can make the Chicken Alfredo bites up to one day in advance. Assemble your bites, cover them with plastic wrap and place in the fridge until you are ready to bake. Bake according to the instructions, but add a few extra minutes if your bites are still cold from the refrigerator.
- Try different fillings. Add cooked spinach or sauteed mushroom to the mixture to add extra flavor and texture.
- Extra Cheese: To make extra cheesy bites, sprinkle extra mozzarella over the filling prior to baking.
- Baking vs. frying: If you want a fried version, you can fry the wonton shells in oil before you fill and serve. Baking is healthier and more convenient.
- You can also use gluten-free pasta or Alfredo sauce made with gluten-free ingredients. You can use gluten-free Alfredo sauce or pasta.
