Ingredients:
For the Cheese Sauce
- The combination of Colby Jack and cheddar works well.
- 2 cups heavy cream
- Half a cup of whole milk
- 2 tbsp. Butter (unsalted).
- 2 tbsp all-purpose flour
- Salt to taste (or 1/2 teaspoon)
- Black pepper, 1/2 tsp
- Half a teaspoon of garlic powder
- 1/4 tsp. paprika optional
- Dijon mustard is optional (for a little kick).
Pasta:
- 1 lb elbow macaroni (or your favorite pasta)
- For boiling pasta, salt
The Topping:
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese (optional).
- Butter (for the crispy topping).
Instructions:
- How to Cook Pasta
- Begin by boiling water in a large pot. Once the water is boiling, follow the directions on your package to cook your macaroni until it’s al-dente. (Usually 8-10 minutes). Drain and set it aside.
- How to make the cheese sauce:
- Melt the butter in a large pan over medium heat. Once the butter has melted, add the flour and continue to cook for about 1-2 minutes. This will thicken the sauce.
- Pour the milk and heavy cream slowly while continuously whisking. Allow it to cook for a further 3-4 minutes until the mixture begins to thicken.
- Reduce the heat, and stir in the cheddar cheese. Continue stirring until the cheese is melted and smooth. If you want to add more flavor, add salt, pepper and garlic powder. You can also use paprika or Dijon mustard.
- Combine Pasta and Cheese Sauce
- Stir the pasta into the cheese sauce, and then add the cooked pasta.
- Optional Baking:
- Preheat your oven to 375degF.
- Transfer your macaroni and cheese to a baking dish that has been greased. Sprinkle mozzarella and Parmesan on top. Butter the top.
- Bake for 15-20 minutes, until the top of the cheese is golden.
- Enjoy and Serve:
- Serve the mac and cheese while it is hot and gooey. This mac and cheese is perfect as a comforting side dish.
