Ingredients:

  • 4 Boneless Chicken Breasts

  • 1/2 tsp salt
  • 1/2 tsp black pepper

  • Pickles
  • Lettuce & tomato (optional, but great for extra flavour)

Instructions:

Step 1: Marinate your chicken

  • Pour the buttermilk into a large bowl over the chicken breasts. Make sure that they are fully submerged.
  • Let the chicken marinate for at least two hours in the refrigerator (overnight for maximum tenderness is recommended).

Step 2: Prepare Flour Coating

  • Mix the (flour), garlic powder, onion, paprika and salt in a shallow dish.
  • Combine all ingredients until well combined.

Step 3: Coat the Chicken

  • Remove the chicken breasts and buttermilk from the marinade.
  • Then, gently press each piece into the flour mixture to ensure that it is coated evenly.
  • Allow the chicken to sit for a couple of minutes so that the coating will stick.

Step 4: Fry your chicken

  • Heat Peanut Oil in a large saucepan over medium heat. You will need enough oil to coat the bottom of the pan about 1/2 inch.
  • When the oil is hot (about 350degF/175degC), place the chicken breasts carefully in the pan.
  • Fry the chicken breasts for approximately 5-7 minutes per side or until golden brown. To ensure safe consumption, the temperature should reach 165degF.

Step 5: Assemble your Sandwich

  • Toast the sandwich rolls in the oven or pan until they are golden brown and crispy.
