For the Biscuits

  • 2 cups all-purpose flour
  • Baking powder, 1 tablespoon
  • Half a teaspoon of salt
  • 1 cup cubed cold unsalted Butter
  • 1/4 cup buttermilk plus extra for brushing
  • Honey (optional for sweetness)

How to make the perfect chicken biscuit

1. Marinate the chicken:

Begin by marinating the chicken. If your breasts are too thick, cut them in half to make sure they’re more evenly sized for frying. Mix the buttermilk with the hot sauce, if you’re using it, in a large bowl. Then, place the chicken into the mixture. Let it sit in the refrigerator for two hours or overnight if you want to get the best results. Cover it and let it marinate. It will tenderize the meat and make it more juicy when fried.

2. How to make biscuit dough

Let’s start making the biscuits while the chicken marinates! Combine the flour, salt, and baking powder in a large mixing bowl. Add the butter to the flour mix after cutting it into small cubes. Work the butter into flour using a pastry knife or your fingertips until it resembles coarse breadcrumbs. It is important to have little bits of butter in the dough as it will help create the flaky layers.

After the butter has been mixed, add the buttermilk. Gently stir the dough until it comes together. Do not over-mix; mix until the dough becomes moistened. Add a teaspoon of honey if you’d like to add some sweetness.

3. Shape and bake the biscuits:

Turn the dough out onto a lightly floured surface and gently knead a few times. Roll it out until about 1 inch thick. Cut out biscuits with a biscuit cutter or even a glass. You can reshape and reroll the dough to make as many biscuits as possible.

Place the biscuits onto a baking tray lined with parchment. Brush the tops of the biscuits with extra buttermilk for a golden colour. They should be baked in a 450degF oven (230degC) for 10-12 mins or until golden brown. Remove them from the heat and allow them to cool slightly.

4. Fried Chicken:

As your biscuits bake, fry the chicken. Mix the flour with the paprika powder, garlic powder and onion powder. Add salt and pepper. Mix the flour and paprika in a shallow bowl. Add cayenne pepper, garlic powder, onion powder, salt and pepper.

Heat about an inch of vegetable oil on medium-high heat in a large skillet or deep skillet. When the oil reaches 350degF (175degC), add the pieces of chicken. The chicken should be fried for 4-5 minutes per side or until golden brown. The chicken’s internal temperature should be 165degF. Remove the chicken from the oil once it is cooked and allow it to drain on a plate lined with paper towels.

5. Build the chicken biscuit:

It’s now time to create your masterpiece! Place a piece of crispy fried chicken on the centre of each biscuit after cutting it in half. You can drizzle some honey over the chicken or the biscuit to add a touch of flavour. You’re now ready to enjoy your Chick-fil-A-inspired chicken biscuit.

How to make the best chicken biscuit:

  • Do not skip the buttermilk marinade. This is essential for juicy and tender chicken. Buttermilk’s acidity helps to break down proteins and make the chicken moister.
  • Try to keep the biscuit dough as cold as possible. Cold butter is important for flaky biscuits.
  • The oil should be at the correct temperature. If it is too hot, then the chicken will burn before it has cooked through. The chicken will become greasy if the oil is too cool.
