Indian food is my favourite. I love big, bold flavours. I love a good curry with Netflix.
My favorite aspect of Indian food is the ingredients list, but sometimes it can be a bit overwhelming. Once I have all the ingredients, I can make them, but I often get stuck because I need to drive to my nearest Indian grocery store to buy them.
It is an exception. When I found a Chef’s recipe for Butter chicken and realized how simple it was, I was thrilled. You can buy all the ingredients at any supermarket. Yes!
Butter Chicken, is it really Indian??
Yes, it is! Murgh Makhani is the name of this dish, which hails from Northern India. It is a milder curry than many Indian curries. Outside of India, this curry has become everyone’s favourite!
Butter Chicken in 3 Easy Steps
- The Chicken should be marinated for 3 hours, or overnight if possible.

The secret of the flavourful, tender chicken is a yoghurt marinade infused with spices, fresh ginger, garlic and lemon juice. Butter chicken is spiced with turmeric, garam masala and chilli powder.

The cream is the main source of richness in this beautiful Butter Chicken sauce. Some restaurants go overboard by adding a generous amount of butter at the end. While some restaurants take it over the top by stirring in a (very!) its flavour and experience, but with less oil than restaurant versions.
The sauce starts as a pale orange but will darken and become a richer orange colour after it has simmered.
Butter Chicken: What to serve?
Sides and starters are important for a good Indian meal! Every curry needs papadums to dip in the sauce and naan for scooping it up, right?
- Microwave them instead of frying them! Papadums can be microwaved for 45 to 1 minute, depending on their size. When they are warm, they will be soft. Cooling down, however, will result in crispier papadums. Your thighs will not expand as much when fried as they would when deep-fried.
