You can achieve the same crispy texture without hot oil with baked buffalo chicken wings. With our baking powder trick and a wire rack, they can get a delicious crust at a fraction of the fat. The crispy wings are irresistible when tossed with a buttery, tangy Buffalo sauce.
Ingredients for the Buffalo Wings
- Chicken wings can be made from frozen or fresh, broken into drums and wingsettes.
- Baking powder is the secret ingredient to crispy chicken wings without deep-frying.
- We use sea salt fine in almost all our cooking.
- Garlic powder adds some zest to the wings before you dip them in buffalo sauce.
- Unsalted Butter – Adds a nice creamy texture to the Buffalo sauce.
- Frank’s Original Red Hot Sauce is an excellent base for your wing sauce. It is tangy and sweet with just the right amount of spiciness.
- Sugar helps caramelize the sauce and thicken it on your hot wings.
Buffalo wings – How to make them?
- Prepare Chicken Wings: Cut the wings in half and separate the drums and wingettes. The wings can be dried with paper towels. Preheat the oven, line a baking sheet with aluminum foil and place a rack on top.
- Mix baking powder, garlic powder, and salt to make dry seasoning.
- Season the wings. Place the chicken wings into a large bowl and coat them with the dry seasoning. Assemble all the wings on the rack in one layer.
- Flip halfway through the 50-minute baking time in the mid of the oven.
- Make Buffalo Sauce: Combine the Butter, sugar and hot sauce in a large bowl.
- Toss wings in sauce – Place chicken wings inside a bowl and toss. Drizzle with sauce, then toss again to coat. Serve with your favorite sauce.
Buffalo Wings: Tips to the best Buffalo wings
- To ensure that they are crispy, remove moisture. Use paper towels to dry them as much as feasible.
- Use baking powder. The baking powder will create a wonderful crust on your wings. You must do it!
- Bake on a rack. A metal rack circulates the wings and makes them crispy.

- Restaurant Style – We like to serve Buffalo wings the way they do in Chilis restaurants, along with chunky blue cheese and celery.
- Avocado Ranch: This dressing is an excellent dip for buffalo wings.
- Jalapeno Ranch- If you also want to add a spicy kick, adding jalapeno will give your sauce the perfect amount of heat.

When do chicken wings become done?
You can use a temperature gauge to test the temperature inside the chicken. It should be at least 165@F, and even better if it is 175@F.
Can I use frozen chicken wings?
If you want to bake them, make sure they are completely thawed before baking. Otherwise, the crispiness will be compromised.
How can the wings be made spicier?
Add a teaspoon or two of black pepper or cayenne to the dry seasoning for a hotter wing.

- Wings and drummettes, 3 lb, split.
- Use aluminum-free baking powder, 1 Tbsp.
- 1 tsp fine salt
- 2 tsp Garlic powder
Buffalo Sauce
- 1/4 cup unsalted Butter, melted
- 1/4 cup Franks Original Red Hot Sauce
- 1 tbsp brown sugar or granulated sugar

Instructions
- Dry the chicken thoroughly with a paper towel. Preheat the oven to about 450@F. Place a rack on top of a baking sheet that has a rim.
- Mix the salt, garlic powder and baking powder in a large bowl. Sprinkle over the chicken, and mix well. Arrange the chicken on a wire rack.
- After 25 minutes, turn the chicken over and continue baking for another 25 or until it is crisp and cooked.
- In a medium-sized bowl, combine the sauce ingredients. Remove the chicken from the baking tray and place it in a bowl. Pour the sauce on top of the chicken. Then, toss the chicken around in the sauce. Serve with your favorite dipping sauce.
