This Buffalo Chicken Dip will be a hit at any party, casual gathering, or game day! This creamy, cheesy, buffalo-flavored dip is made with ranch dressing and shredded chicken. Serve with crackers, tortilla chips or celery sticks for a delicious appetizer.

Buffalo Chicken Dip

Ingredients:

  • 2 cups of cooked chicken, shredded (about 3 cups rotisserie or 2 large chicken breasts).
  • 8 oz cream cheese, softened
  • 1/2 cup ranch dressing
  • Add more or less to taste.
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • Add 1/4 cup crumbled blue cheese (optional for more flavor).
  • If you are not using rotisserie poultry, use 1 tablespoon of olive oil to cook the chicken.
  • To taste: salt and pepper
  • Fresh parsley chopped (optional garnish, for garnish).

Instructions:

1. Prepare the chicken:

  • Heat 1 tablespoon olive oil in a pan over medium heat if you are using raw chicken. Season the chicken breasts (with salt and pepper) and cook them for 6-7 minutes on each side or until they are fully cooked.
  • If you are using rotisserie chicken, shred the chicken with two forks. If you are using rotisserie poultry, shred the chicken.

2. Buffalo Chicken Dip:

  • Preheat your oven to 375degF.
  • Combine the cream cheese with the ranch dressing, Buffalo Wing Sauce, and half the cheddar and mozzarella in a large bowl. Stir until well combined and smooth.
  • Stir the chicken in the sauce to ensure it is evenly coated. Add blue cheese crumbles if you are using them.

3. Bake the Dip

  • Transfer the mixture into a baking dish (8×8 inch or similar size is ideal). Spread the mixture evenly in the baking dish.
  • Sprinkle the remaining cheeses (Cheddar and Mozzarella) on top.
  • Bake the dip in the oven until it is bubbly, golden and bubbly on top. Broil the dip for 2-3 minutes to get it extra brown.

4. Serve:

  • Remove the dip and allow it to cool down for a couple of minutes. If desired, garnish with parsley chopped.
  • Serve the dip along with crackers, tortilla chips, carrots, celery, or carrot sticks.

Tip and variations:

  • Add more buffalo sauce or cayenne to make it spicy. Reduce the amount of Buffalo sauce if you prefer it milder.
  • You can add Greek yogurt or sour cream to the mix for a creamy texture.
  • Blue Cheese Lovers: If you are a blue cheese lover, add more blue cheese to the dip. You can also serve it on the side.
  • Slow Cooker: To make the dip using a slow cooker you can combine all the ingredients (except for the cheeses). Cook on low until heated, about 2 hours. Then top with shredded cheese and cook an additional 15 minutes until the cheese melts.
  • Prepare Ahead: The dip can be assembled in advance and stored in the refrigerator until you are ready to bake. When you are ready to serve, bake the dip according to the directions.
