BBQ Chicken Pizza

Ingredients:

Pizza is the best:

  • Pizza dough (store-bought or homemade).
  • About 2 breasts of cooked chicken breast per 1 lb.
  • Half a cup of BBQ sauce (your favorite brand or homemade).
  • Half a red onion thinly sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • Chop 1/4 cup fresh cilantro (optional garnish)
  • Olive oil for brushing the crust

To make the Homemade BBQ Sauce:

  • Half a cup of ketchup
  • Apple cider vinegar 2 tablespoons
  • Brown sugar, 2 tablespoons
  • 1 tablespoon Dijon mustard
  • Smoked paprika, 1 teaspoon
  • Half a teaspoon of garlic powder
  • Half a teaspoon of onion powder
  • To taste: salt and pepper

Instructions:

1. Make the BBQ sauce (if you are making it yourself):

  • Combine the ketchup with the apple cider vinegar and brown sugar in a small pan. Add the Dijon mustard, smoked paprika powder, garlic powder, onion powder, and smoked paprika. Stir together.
  • Stir occasionally and bring to a gentle simmer on medium heat. Cook for 5 to 7 minutes until sauce is slightly thickened. Add salt and pepper according to your taste.
  • Remove from heat, and put aside.

2. Preheat the Oven

  • Preheat your oven to 475degF (245.2degC). Preheat your pizza stone if you are using one to achieve a crispy crust.

3. Prepare the chicken:

  • Sprinkle 1/4 cup of BBQ sauce over the cooked chicken. Set aside.

4. Roll out the pizza dough:

  • Roll out the pizza dough on a lightly floured surface to the desired thickness. This is usually about 12 inches. Transfer the dough onto a parchment-lined baking sheet or pizza peel.

5. Assemble your Pizza:

  • To help the crust crisp up in your oven, brush it with olive oil.
  • Spread the remaining BBQ Sauce over the pizza crust, leaving a border for the crust.
  • Distribute evenly the chicken coated with BBQ sauce.
  • Sprinkle thinly sliced red onions over the chicken.
  • Add shredded cheddar and mozzarella cheese.

6. Make Pizza:

  • The Pizza should be baked in a preheated oven for 10-12 minutes or until it is golden brown. The crust will be extra crispy if you use a pizza stone.

7. Garnish and serve:

  • Remove the baked Pizza from the oven and allow it to cool for about a minute.
  • Garnish the dish with fresh chopped cilantro to add color and flavor.
  • Enjoy! Slice, serve and enjoy.

Tip and variations:

  • Grilled Chicken – If you’re looking to give your Pizza a smoky taste, grill the meat instead of cooking it over the stovetop.
  • Add extra vegetables: To add texture and taste, you can add bell peppers or mushrooms to your Pizza.
  • Make it Spicy: Drizzle some hot sauce or add some jalapenos to the top before baking the Pizza for a spicy kick.
  • Gluten-Free: For a gluten-free option, use a gluten-free pizza crust.
  • Try different combinations of cheeses, like adding goat cheese or blue to create a unique taste.
  • Make Ahead: You can make the BBQ chicken ahead and store it in the refrigerator for up to three days. This will help you assemble the Pizza even faster.
