Ingredients:
BBQ Chicken
- 2 skinless and boneless chicken breasts (about a pound)
- Olive oil 1 tablespoon
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Smoked paprika, 1 teaspoon
- To taste: salt and pepper
- 1/2 cup BBQ sauce (your favorite brand)
Flatbread:
- Four flatbreads, either bought or made at home
- This simple recipe can be used to make your flatbread:
- 2 cups all-purpose flour
- Half a teaspoon of salt
- Baking powder, 1 teaspoon
- 3/4 cup of water
- Olive oil 2 tablespoons
- This simple recipe can be used to make your flatbread:
For the Toppings
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded sharp cheddar cheese
- 1/4 of red onion thinly sliced
- Half a cup of corn kernels (fresh or frozen)
- Fresh cilantro chopped to 1/2 cup
- Use 1/2 cup of BBQ sauce for drizzling.
- Optional: Jalapenos sliced for a spicy kick.
Instructions:
1. Cook the Chicken
- Start by seasoning your chicken breasts, then use olive oil, garlic, onion powder and smoked paprika. Rub the seasoning on both sides of the chicken.
- Once the skillet is hot, add some olive oil, so once the skillet is hot, add in the chicken breasts. Cook for 6-7 minutes on each side until golden brown.
- Remove the chicken and let it sit for a couple of minutes before shredding it with two forks.
- After shredding, coat the chicken with 1/2 cup BBQ sauce. Set aside.
2. Flatbreads are ready to be made:
- Skip to step 2 if you are using flatbreads that you have purchased.
- Mix the flour, baking powder, and salt in a large bowl to make homemade flatbreads. Stirring continuously; add the olive oil and water until a dough is formed. The dough should be kneaded for 5 minutes until it is smooth and elastic on a floured work surface.
- Divide the dough into 4 equal portions. Roll each portion out into a thin round flatbread (8 inches or so).
- A large skillet or griddle should be heated to medium-high heat. Each flatbread should be cooked for approximately 2-3 minutes on each side until golden brown and with bubbles. Set aside.
3. Assemble flatbreads
- Preheat your oven to 375degF. Grill these flatbreads on medium heat if you are using a grill.
- Spread the flatbreads out on a baking tray, so as a base, spread a thin layer (about 1/8 inch thick) of BBQ sauce over each flatbread.
- Distribute the chicken evenly over the flatbreads.
- Sprinkle the chicken with a mixture of mozzarella and cheddar cheese. Add thinly sliced onions and corn kernels.
- Pour extra flavor, drizzle some more BBQ sauce on top of each flatbread.
4. Bake or grill:
- Oven Method: Place flatbreads into a preheated, hot oven. Bake for 10-12 mins, or until cheese is bubbling and melted and the edges are crisp.
- Grill Method: Place the flatbreads assembled on the grill and close the lid. Grill the flatbreads for 5-7 minutes, then check them periodically to make sure the cheese is melted, and they are crispy.
5. Garnish and serve:
- Sprinkle with chopped fresh cilantro after the flatbreads have been taken out of the oven.
- Add some jalapenos, sliced, if you want a spicy kick.
- Serve immediately after cutting into wedges!
Tip and variations:
- You can customize the chicken by using a rotisserie instead of cooking it yourself. This is a faster option. Shred the chicken and mix it with BBQ sauce.
- Vegetarian option: To make a vegetarian version of this dish, swap out the chicken with roasted vegetables such as bell peppers and zucchini. Add some BBQ sauce to give it a little flavor.
- Use Different BBQ Sauces. The beauty of the recipe is that it allows you to use any BBQ sauce, whether sweet, tangy or spicy. You can even mix different sauces for a unique flavor profile.
- You can prepare these flatbreads in advance (without the cheese). Store them in the refrigerator. Add the cheese, then bake or grill them when you’re ready to serve.
- Add some greens: To create a fresh contrast, add arugula or spinach to the flatbreads just before serving.
- Grilled Corn – For a smoky taste, grill the kernels of corn or add grilled corn to the cob for a rustic flavor.
